Pair With: This wine will pair well with beef or poultry casseroles, and barbecued meats if used with mild spices because the taste of red Bourgogne is delicate. It would also pair well with a simple roast chicken, a rack of young lamb, beef carpaccio, and spring vegetables.

Pierre Laurent owns about 30 acres of vineyards in the Bourgogne Côtes de Nuits appellation, around the village of Nuits Saint Georges. He produces white wine from Chardonnay, and red wine from Pinot Noir, on calcareous slopes facing southeast. The vines are 20 to 25 years old. Pierre Laurent ceased using herbicides in 2013 to engage in organic agriculture


The grapes are destemmed and put in small vats during maceration and fermentation for 20 to 25 days. Then the grapes are pressed, and the juices are clarified and aged in small oak barrels for 12 to 15 months. All the barrels are old, (no new oak) to preserve the fruity flavor. The entire process is carefully timed and controlled by daily tastings. Then comes the assemblage and bottling.
