Belgians Marc and Tine Verstraete bought Chateau Castigno due to their love of architecture and wine. It also includes 75 acres of vineyards and the charming old village which was transformed into a picturesque wine tasting resort with 24 rooms, three restaurants, and spa. Caring for the neglected 50-year-old vines with oenologist Michel Tardieu, they created one of the most beautiful organic wineries in the Saint Chinian appellation.
The exceptional terroir is at an altitude of 250 m. Draft horses are used to plough the soil and to carry the handpicked wine in crates to the winery.
The spectacular cellar has a bottle silhouette when seen from the sky and is covered with cork bark. Designed by famous Belgian architect Lionel Jadot, it is full of small cement or wood vats as the fourteen different grape varieties are vinified separately. The wines are tailor- made by the team of young winemakers working in the domain. To keep the freshness, this cuvée is not aged in oak barrels.
