50% Cabernet Franc/ 50% Syrah from Cabardès – Languedoc Roussillon region.
The Auzias family have been vignerons from father to son since 1872. They own nearly 400 continuous acres of vineyard near the ancient fortified city of Carcassonne in the south west of France.
The present owners are Nathalie and Dominique Auzias.
The vines are planted on the clayey limestone slopes of the Montagne Noire and hand-harvested.
This special cuvee is made from grapes that are totally destemmed and slowly fermented after a long 40-day maceration. The wine is aged in barrels for 18 months and bottled at the property.
This cuvee is one of several AOP Cabardès produced by this domain.
