Tasting Notes: White blossoms and orchard fruits like pears, peaches and pink grapefruit balance a creamy mousse texture on the palate. Hints of exotic tropical fruits and citrus fade to mild toasty biscuit notes on the finish from ageing on lees, fine bubbles convey elegance on the tongue.

Pair With: Wonderful as an apertif, though will pair excellently with a poached seafood platter or light appetizers like goat cheese crostini, Gruyère gougères or vegetable spring rolls. Though wonderful with brunch items like crêpes and meringues, this wine is substantial enough to also pair with white meats like chicken, fish, and pork. Try Sandre avec Beurre Blanc, mushroom risotto, or roast poultry in a light cream sauce. When pairing with cheese, goat cheese is the ideal pairing: Valençay, Crottin de Chavignol, or Sainte-Maure de Touraine.
