Graves – Château Haut Calens red 2015


Tasting Notes: Aromas of Cherry, red fruits and Licorice. Intense flavor, full-bodied, subtle cherry hints and silky tannins.

Blend: 70% Cabernet Sauvignon,30% Merlot

Hold Time: up to 7 years

Alcohol: 12.5%

Pair With: Red meats, duck and cheese such as mild Brie or Camembert. Grilled or roast lamb with garlic and rosemary would also make a great pairing.

Thierry Yung is Sommailier founder’s first cousin and is fifth generation wine maker. He started working in the family vineyard with his father and uncle in 1984. After many years working under their watch and learning from them, he took over Château Haut-Calens in 2005. His hard work and passion since then made Château Haut-Calens an outstanding wine from the Graves region in Bordeaux.

Since Thierry took over from his father Albert, he grew the property from 20 to 30 hectares by not only buying more land to expand but at the same time reducing the production per hectare in order to improve the quality. Thierry’s flagship wine is Château Haut-Calens reserve which is made of 70% Cabernet Sauvignon and 30% Merlot, 2 typical grape varietals from Bordeaux. The wine has been aging in oak barrels between 12 and 18 months before being bottled and Thierry has only produced 6,000 bottles of this very fine wine.
