Pair With: Excellent as an aperitif with cheesy nibbles, gougères and charcuterie, or foie gras. Will also pair well with veal or turkey blanquette, with cream and mushrooms added. Drink it with seafood risotto, or shellfish.
Young winemaker Olivier Tricon tells his story:
“It was in 1972 that my father and uncle bought this domain. At the start of the 80s, they hired me as a cellar master. I bought the domain in 1998 and enlarged it around the village of Chablis, on slopes facing south west with optimum exposure to the sun.
The vineyards are worked with respect for the environment and Chablis traditions, while using modern techniques and equipment, plus our passion and know how.
Harsh growing conditions here in the stony soil favor small quantities with a concentration of aromas that give our wines their identity. We harvest at full maturity and keep our wine in steel tanks for nine months. We get a limpid and light gold wine, with good balance of acidity and fineness. “
