Tasting Notes: Red berries and cherries form the bouquet with touches of mushroom, cedar, and vanilla. A vivacious acidity shows red and black fruits that mellow into ripe raspberries and black cherries, braced by subtle tannin and baking spices. This wine retains it’s fruit-forward nature through hours of drinking, and displays complex notes of mushroom, game, cloves, fennel and vanilla.

Cellar: Up to 10 years, recommended 3-5. Decant if opening now.

Pair With: The producer recommends this wine to pair with red meats and game, we take this to mean it will be excellent with lamb and duck, quail, roasted game hen or even rabbit. Fruit based or savory sauces, and savory roasted or stewed vegetables like mushrooms or Iburi-shoyu bok choy. For cheeses, the producer suggests Saint-Nectaire and Comté, both savory and nutty in their own way. Some goat cheeses will also pair well, try going for a mild and fresh varietal like Crottin.
