This wine will pair well with white fish and gambas or langoustines. Also, with poultry in creamy sauce or a veal Blanquette. You can try it with cheese, especially blue cheese or young goat cheese, and dishes like spinach and fresh goat cheese lasagna.

Roland Rapet and his son Vincent manage the family estate of 43 acres. The domain is spread over several villages in the Beaune area. A wine tasting cup from 1792 named after the family is a treasured testimony of their long-standing ownership of the domain and wine making tradition.

This wine comes from a young vineyard planted in 2000 on a south west exposed slope. The word combotte means hill, the slope is quite steep, and it makes the work difficult. The soil is white limestone and clay.

The grapes are picked carefully in small crates, and pressed whole. After a 24 hours maceration, and controlled fermentation, the wine is aged on lees for 5 months and bottled after 12 months. It is a light golden color wine, fresh and elegant.
