Tasting Notes: Notes of jammy red fruit, raspberry, tobacco and cocoa. A rich and powerful wine with a velvety palate, cassis and ripe black fruits blend with notes of clove and smoked meats, providing excellent structure with the smoky and earthy tannins.

Blend: 80% Syrah, 20% Grenache

Hold Time: Now or up to 10 years

Alcohol: 15%

Pair With: This rich and generous wine will pair well with prime beef, lamb leg, tapas and  funky cheese. Some would try dark chocolate, 60-70% cocoa.

Description

Château Fonsalade is situated in the heart of Languedoc in the Saint Chinian appellation. It is named after the Occitan words Font Salat meaning salted fountain, because of the naturally salted spring that flows on the property.

It has antiseptic value and helps keep the vines healthy.

The 60 acres domain produces 7 different wines on 6 types of soil, with nine grape varieties….So winemaking here is complicated and requires excellent knowledge and experience . It is a team effort including the owner Cedric Barbe and four other dedicated professionals.

This special cuvée was born by chance…In 1973, they started carbonic maceration. The temperature of the tank rose to 93 F° instead of 82F°.

They thought the batch was ruined but the wine got more depth and richness.

Thus, the name Felix Culpa, Latin for happy mistake!
