Via Caritatis is a selection of the best wines produced by small vignerons and the monks and nuns of Sainte Madeleine du Barroux Abbey.The vineyards are on the steep slopes around Mont Ventoux. Most are terraced and everything must be done by hand, so the monks and nuns work hard at pruning, tying, budding and gathering. And the terraces have to be maintained or sometimes rebuilt. They care to preserve the beauty and variety of the Provence landscape and also keep fruit and olive groves.
This wine is an assemblage of Grenache from the monks’vineyard, and Syrah from the sisters’enclosed vineyard. After a severe sorting to keep only perfect ripe grapes, destemming, and a 25 days maceration on the skins, the wine is aged in concrete tanks, only 20% in oak barrels for two years.
